The fruit was crushed and de-stemmed prior to being fermented in stainless steel tanks for 7 days on skins with three pump overs a day to exact colour and tannin. Malolactic fermentation occurred in tank before 16 months oak maturation in American and European puncheons (500 litres). This medium bodied plummy red wine with garnet hues, has perfumed aromas of dark plum and cherries with hints of vanilla. The palate is soft and silky yet richly flavoured with sweet spices and fruit, while the pleasingly textural tannins draw this silky wine through to a long flavoursome finish. Drinking well now, this wine can be carefully cellared for 3 to 5 years. Merlot is a great match to tomato based pasta and mushroom dishes.
